Deer Venison – Perhaps The World’s Perfect Food

I might be stretching this one just a bit, claiming that deer venison might be the world’s perfect food but don’t tell that to Timmy Armstrong of Connecticut. Timmy suffers from an allergy condition I can’t pronounce and have difficulty spelling – eosinophilic esophagitis (copy and paste was designed for people like me).
There are very few foods he can eat and venison is one of them. Foods that he reacts to, make his esophagus swell and restricts the motion within the esophagus that allows food to get to the stomach. His diet is so restrictive he needs a feeding tube to get all his nutrition.
The doctor treating him says that this condition, considered once very rare, is on the rise and nobody seems to no why.
The cause of eosinophilic esophagitis is unknown but Dr. Hyams says many doctors suspect that the environment may be a factor. “These types of disorders are very rarely seen in underdeveloped parts of the world where hygiene is not a premium but at the end of the day .. we don’t know,” he said.
Perhaps there is something about the deer that will give scientists the help they need to understand this disorder.

Interesting condition. At least he does get to experience some great venison though.
This is an interesting post because it just so happens that I am too an eosinophilic esophagitis sufferer since my birth. The foods I am allergic to are raw onions, garlic and pepper among a few other spicy foods. In the 50’s very little to nothing was known about this condition and my parents literally had to try by trial and error what I could and couldn’t eat.
As I get older it seems the condition has somewhat grown out, or the body has built up a certain resitsance, since I am now able to eat a very small amount of raw onions and other aggravating foods without the fear of suffocating which usually also involves a mad dash to the nearest hospital.
